Ingredients
1/2 Tbs of Sesame oil
1 Tsp Crushed garlic
1 Tsp of crushed ginger
5 Cups of Vegetable broth
3 Cups of Mushrooms
1 Tbs of GLUTEN FREE soy sauce
3 Zucchinis ( or Zucchini noodles)
1-2 Cups of spinach
1/4 Cups grated carrots
1 Tbs chopped onion
Salt and Pepper
1. Create Zucchini noodles with spiralizer. Set aside.
2. On stove top, in pot stir garlic, ginger, mushroom, and sesame oil on medium to high heat for 2-3 min. Add zucchini noodles and let cook for another 5 min.
3. Add in broth and soy sauce and bring to boil.
4. Low hear immediately and allow to simmer!
5. While simmering add the remaining ingredients.
6. Stir!!!
