Perfect for FALL

Slow cooker Broccoli Cauliflower Soup


Ingredients

3 cups of broccoli, chopped

2 cups cauliflower, chopped

2 loved garlic, minced

1/2 cup diced shallots

1 large carrot, diced

3 1/2 cups of veggie broth (I make home made will share later this week)

Spinkle Kosher salt, pepper, and hot sauce if like

1 cup of milk (we use non dairy)

6 oz of Cheese- optional (we use daiya)

1 cup plain non fat greek yogurt (we also use non dairy)


Instructions

Place broccoli, cauliflower, carrots, shallot, garlic, salt, pepper, hot sauce, and broth to slow cooker.


Stir everything together then cover with lid, on low.


Cook for 6-8 hours till veggies are tender.


Use a blender and mix till smooth.


Add milk ad cheese and stir till melted.


Lastly add yogurt until combined and the soup is smooth once smooth stir and serve.
